    Chix-Zucchini Pasta

    Recipe Introduction

    Aunt Barbara made this for Uncle Dennis when he was sick and I was over visiting. It was so yummy!

    List of Ingredients

    4 boneless, skinless chix breasts, cubed
    4-5 small zucchinis, cubed
    1 small onion, cut into chunks
    12-15 large mushrooms, sliced
    2 T. minced garlic
    3 16-oz cans diced tomatoes
    2 T. basil
    2 T. olive oil
    Angel hair pasta
    parmesean cheese to taste

    Recipe

    Lightly saute all the veggies and 1 T. of the garlice in 1 T. olive oil and set aside. Saute the chix in remaining garlic and oil. Once chix is done, add the veggies, tomatoes and basil and simmer until veggies are to desired tenderness (about 15 minutes). Cook and drain the pasta. Serve chix and veggies over pasta and top with cheese.
