    *MOM'S* Sweet Potatoes

    Andrew, I know you like your dad's recipe better, but this one *really* is the best! I make it EVERY year for Thanksgiving and Christmas.

    List of Ingredients




    8 small sweet potatoes
    30 whole cloves
    1 large can crushed pinapple (drain off about 1/2 the juice only)
    2 T. cinnamon
    1 C. brown sugar
    about half a bag of mini-marshmallows

    Recipe



    Peel sweet potatoes and place in giant pot of water. Add whole cloves (make sure you count these out because you'll have to fish them out after you cook the potatoes and you want to make sure you get them all). Bring to boil and boil for about 10 minutes or until potatoes are soft. Drain off water and remove cloves. Mash with hand masher. Add other ingredients except marshmallows. Place in 9x13 pyrex. Bake at 350 for 20 mins. At this point, you can refrig. for up to one day. To re-heat, let set out and come to room temp, then heat through. Add marshmellows on top and broil until browned, being very careful not to burn them!
