Crockpot Pepper Steak

2 lbs. beef round steak
2 T. oil
¼ c. soy sauce
1 c. chopped onion ( I prefer to cut large wedges)
2 cloves garlic, minced
1 T. sugar
½ t. salt
¼ t. pepper
¼ t. ground ginger
1 (16 oz.) can diced tomatoes
2 lg. green peppers, cut into strips
½ c. cold water
1 T. cornstarchRecipe
Cut beef into 3 inch by 1 inch strips; brown in oil in skillet. Transfer to a slow cooker. Combine the next seven ingredients; pour over beef. Cover and cook on low for 5-6 hours or until meat is tender. Add tomatoes and green peppers; cook on low for one hour longer. Combine the cold water and cornstarch to make a paste; stir into liquid in slow cooker and cook on high until thickened. Serve over noodles or rice.
NOTE: I have even added stir-fry veggies during the last hour of coming. Turns out well.
