- 4 lbs. med. cucumbers
- 3-1/2 T. salt
- 1-1/2 T. mustard seed
- 1-1/2 T. bay leaves
- 3 c. vinegar
- 3 c. water
- 6 cloves garlic
Instructions
- Wash cucumbers and cut each in quarters lengthwise and put in a large bowl. Add salt, mustard seed and bay leaves.
- Heat vinegar and water to boiling; pour over cucumbers. Cover and allow to stand for 20 minutes.
- Pack cucumbers immediately into hot sterilized jars. Cover with vinegar solution leaving 1/2 inch headspace. Add a garlic clove to each pint jar.
- Seal and process in hot water bath for 10 minutes.
