    I saw this recipe on the internet and had to make it. These taste like an Almond Joy candy bar. This recipe makes a huge batch of cookies. Depending on the size you make them. You can freeze the dough and have handy when unexpected company or events pop up. It’s also easy to cut this recipe in half.

    List of Ingredients




    1 cup butter
    1-1/2 cups white sugar
    1-1/2 cups brown sugar
    4 eggs
    3 teaspoons vanilla
    1 teaspoon coconut extract, optional
    4-1/4 cups flour
    2 teaspoons baking soda
    1 teaspoon salt
    4 cups chocolate chips
    2 cups sweetened coconut
    2 cups chopped almonds, toasted

    Recipe



    Pre-heat oven to 375° degrees F. Lightly grease cookie sheets or line with parchment paper.

    In a large bowl, cream the butter and sugars together. Beat in the eggs, one at a time, stir in the vanilla. In a separate bowl, combine dry ingredients.
    Stir in the dry ingredients until well mixed, then stir in the chocolate chips, coconut and almonds. Drop by rounded tablespoonful’s onto the prepared cookie sheets.

    Bake for 10 to 12 minutes. Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
