Pesto Potato Casserole

List of Ingredients
4 C shredded frozen potatoes (has to be shredded)
1/2 C pesto
1 C shredded Mozzarella or 1/2 cup of feta cheese
1 C milk
1/4 C Parmasan cheese
TOPPING
1/3 C Parmasan
1/3 C breadcrumbs
2 Tbsp. butter
Recipe
Grease a 11x9 pan
Set oven to 425 (not a typo - actually 425)
Place 2 cups of shredded frozen potatoes in pan
Dollop on pesto, shredded Mozzarella or feta cheese on top of potatoes
Add another 2 cups of shredded frozen potatoes
Nuke 1 cup of milk with Parmasan cheese, salt and pepper and pour over potatoes
TOPPING
Mix 3 ingredients together and sprinkle on top of potato mixture
Bake 25 min at 425
Let stand 5 minutes.
Good with Cottage Roll, Keilbasa, etc.
