    I've made many, many meatballs but these are almost fluffy in texture


    List of Ingredients


    • 1 lb. ground beef
    • 1 lb. ground pork (or use pork sausage removed from casing - don't add other seasonings)
    • 1 egg
    • 1 cooled cooked potato riced (must be riced to work)
    • 1 small onion diced
    • S&P to taste
    • 1 clove garlic minced
    • 1/2 tsp. basil
    • 1/2 tsp. oregano
    • 1/4 cup grated Parmesan cheese
    • 1 C moistened bread crumbs or I sometimes use oatmeal


    Instructions


    1. Mix all ingredients together
    2. If you are using sausage (your choice) out of the casings you won't need garlic, basil or oregano
    3. Using an ice cream scoop, scoop out meatballs
    4. Bake at 350 for 40 minutes
    5. Add meatballs to pasta sauce or freeze until needed.
