    1 eggplant peeled and sliced across(coin shaped)
    2-3 T olive oil (you might need more if you have a large eggplant)
    1/3 cup Atkins baking mix
    garlic salt & Pepper
    1/2 cup medium salsa (hot if you like it spicy_
    2 cloves fresh crushed garlic
    1/2 cup fresh shredded parmesan cheese
    Heat olive oil on med-high heat.

    Dip sliced eggplant in baking mix. Drop into olive oil. Watch carefully because the baking mix turns brown pretty quick. Season with the garlic salt and pepper. Turn when brown. When the other side gets brown remove from heat and put into casserole dish. Continue cooking all of the eggplant (add extra olive oil when needed). After all has been browned drop salsa, some extra olive oil, garlic, garlic salt, pepper and cheese on the eggplant. Bake at 325 degrees till cheese browns.
