Shrimp and Cheese Puffs

Serving Size : 28 puffs
1/2 cup butter or margarine -- softened
2 cups shredded cheddar cheese
1 egg -- separated
7 slices bread -- cut into quarters
crust removed
28 cooked shrimp
Recipe
Preheat oven to 350º.
Cream butter and cheese; blend in egg yolk
Beat egg white until stiff; fold into cheese mixture.
Arrange bread squares on ungreased baking sheet. Top each with a shrimp and cover with a rounded teaspon of cheese mixture.
Bake 15 to 18 minutes or until golden brown.
*To make ahead, cover and refrigerate up to 12 hours. Bake just before serving.
