    Special Pumpkin Dessert

    Crust:
    1 cup flour
    1 stick butter or margarine, soft
    1/2 cup pecans, chopped

    Mix above ingredients. Spread and pat into the bottom of an 8 or 9 inch baking dish or pan. Bake at 350 degrees for 15 minutes. Let cool.

    Filling:
    8 oz. cream cheese, softened
    2 cups Cool Whip, divided
    1 cup powdered sugar
    1 1/2 tsp. vanilla, divided
    1 pkg. (regular size) instant vanilla pudding
    1 cup canned pumpkin (or 1/2 of a 16 oz. can)
    2/3 cup milk
    3/4 tsp. pumpkin pie spice
    More Cool Whip to frost the top (about 2 cups should do it)
    More chopped pecans to sprinkle on top (optional)

    Recipe






    Combine cream cheese, powdered sugar and 1 tsp. of the vanilla. Beat with mixer until smooth. Fold in 1 cup of the Cool Whip. Spread on top of cooled crust.

    Mix pudding, pumpkin, 1 cup of the Cool Whip, milk, 1/2 tsp. of the vanilla and pumpkin pie spice. Beat slowly with egg beater or whisk just until well mixed. Pour on top of the cream cheese mixture. Spread more Cool Whip on top. Sprinkle with pecans, if desired.

    For 13x9 inch pan, double all ingredients.
