    6-7 potatoes, peeled and cut in cubes
    2 ½ cups sharp grated cheddar cheese
    ¼ cup butter
    1 cup sour cream, at room temperature
    Salt and pepper

    Recipe





    Boil potatoes, drain and let cool. Preheat oven to 350. Grease pan with butter, 8x8 baking dish. Cook 2 cups of the cheese and the butter in a small sauce pan over low heat, until melted, stirring constantly.

    Remove from heat, let cool slightly and stir in sour cream. Add salt and pepper to taste. Fold mixture into potatoes. Pour into baking dish. Top with remaining cheese and sprinkle with paprika. Bake for 30 minutes or until bubbly.
