RASPBERRY VINEGAR

A SCARLETT FAVORITE
4 half pint jars
4 cups raspberries
5 cups white OR champagne vinegar
Combine raspberries and vinegar in a large stainless or enamel saucepan.
Bring to a boil.
Boil gently for 15 minutes.
Meanwhile prepare jars.
Pour vinegar through 2 layers of wet cheesecloth.
Return vinegar to the saucepan and return to a boil.
Pour into clean hot jars leaving 1/4 inch head space.
Process in a boiling water bath for 5 minutes.
