SOUTHERN STYLE POTATO SALAD

List of Ingredients
1 gallon potatoes (about 16 large), cooked, peeled and sliced
10 hard-cooked eggs
1 cup chopped onion
2 cups salad dressing
1 cup light cream
1/3 cup cider vinegar
1 tablespoon pickle relish
1/3 cup sugar
3 tablespoons prepared mustard
1/2 teaspoon saltRecipe
Place potatoes in a large salad bowl. Separate eggs. Chop whites and add to potatoes with onion. Toss gently. In another bowl, mash yolks with salad dressing, cream, vinegar, pickle relish, sugar, mustard and salt. Pour over potatoes and stir to coat. Cover and chill.
Yield: 16-20 servings.
