    A slight twish on standard Deviled Eggs


    List of Ingredients


    • 8 large hard boiled eggs (peeled)
    • 3 Tbsp mayonnaise
    • 1 1/2 Tbsp chopped fresh tarragon
    • 1 Tbsp minced shallot
    • 2 tsp fresh lemon juice
    • 1/8 tsp cayenne pepper
    • 1/4 tsp hot pepper sauce
    • 8 oz crabmeat
    • To garnish - Paprika and/or fresh tarragon sprigs
    • Salt and pepper to taste


    Instructions


    1. Hard boil the eggs
    2. Allow eggs to cool
    3. Cut eggs lenghtwise in half
    4. Scoop out yolks
    5. Place yolks from 4 eggs in amedium bowl
    6. Mash yolks with a fork
    7. Mix in mayonnaise, chopped tarragon and minced shallot.
    8. Mix in lemon juice, cayenne and hat pepper sauce.
    9. Mix in crab
    10. Season to taste with salt and pepper
    11. Mound the crab meat mixture in cavity of each egg white (about 1 heaping Tbsp for each)
    12. You can place in fridge up to 4 hours ahead - when ready to serve garnish with a sprig of tarragon and/or a sprinkle of paprika.
