    List of Ingredients


    • 6 large eggs
    • 1/4 cup mayonnaise
    • 1 tsp Dijon mustard
    • 1/8 tsp cayenne
    • Paprika to garnish
    • Salt and pepper to taste.


    Instructions


    1. Cover the eggs with cold water by 1 1/2 inches in a 3 qt heavy saucepan and bring to a rolling boil.
    2. Reduce heat to low and cook eggs - covered completely, 30 seconds.
    3. Remove from heat and let stand covered for 15 minutes.
    4. Transfer eggs with a slotted spoon to a bowl of ice and cold water to STOP cooking - let stand 5 minutes.
    5. Peel the eggs.
    6. Cut each egg in half (lenghtwise).
    7. Carefully remove the yolks and mash in a bowl with a fork.
    8. Add mayonnaise, mustard, cayenne and stir with a fork until smooth.
    9. Season with salt and pepper.
    10. Fill a pastry bag with yolk mixture and pipe into egg whites.
    11. Garnish with a sprinkle of paprika.
    12. Serve room temp or chilled.
