    We had this with Karen in Santa Fe


    List of Ingredients


    • 6 large ripe HASS avocados (halved)
    • 4 scallions thinly sliced
    • 3 tsp finely chopped cilantro
    • 2 tbsp fresh sqeezed lime juice
    • 1/2 tsp ground cumin
    • pinch of cayenne pepper
    • coarse salt and fresh ground black pepper to taste


    Instructions


    1. Remove the avocado pits, insert a knife blade into pits and twist. Scoop out flesh into a medium bowl.
    2. Mash with a pestal until semi smooth, leaving some chunks for texture.
    3. Stir in scallions, cilantro, lime juice, cumin and cayenne.
    4. Season with salt and pepper.
    5. Serve


    Final Comments


    Serve with chips! Ole!
