    Thanksgiving Bars

    List of Ingredients


    • BARS -
    • 1 cup all purpose flour
    • 1 cup whole wheat flour
    • 1 cup sugar
    • 1 cup pecans - VERY finely chopped
    • 2 tsp baking powder
    • 1 tsp ground cinnamon
    • 1 tsp Pumpkin Pie spice
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 4 large beaten eggs
    • 1 15oz can of 100% pure pumpkin
    • 1/2 cup canola oil
    • 1/4 cup 1% lowfat milk
    • 1/2 cup Mini Chocolate Chips
    • FROSTING-
    • 6 oz Cream Cheese
    • 3/4 stick butter
    • 4 cups powdered sugar
    • 1 Tbsp cream
    • 1 tsp vanilla


    Instructions


    1. Preheat your oven to 350F

    2. Lightly oil coat a 15x10x1 inch baking pan (jelly-roll pan), with nonstick cooking spray and set aside.

    3. Whisk together the flour, whole wheat flour, sugar, pecans, baking powder, cinnamon, baking soda and salt in a large bowl - dry ingredients

    4. In a seprate bowl (also large) combine the eggs, pumpkin, canola oil and milk. wet ingredients.

    5. Add the dry mixture to the wet ingredients, 1 cup at a time and incorperate well. At this point also add the 1/2 cup of mini chocolate chips.

    6. Stir to combine

    7. Spread the batter evenly in the prepared pan and bake for 25 minutes or until a wooden toothpick inserted in the center comes out clean.

    8. Cool on wire rack.

    9. To make frosting add the cream cheese, butter, powdered sugar, cream and vanilla. Mix with beater until creamy.

    10. Frost when bars are cool.
