    Recipe Introduction


    Pastitsio is one of Jim's all time favorites. It's a type of Greek casserole. The chef on the Silver Sea's shared his recipe with me!


    List of Ingredients


    • 2 Tbsp extra virgin olive oil
    • 1 onion - chopped
    • 1 garlic clove - crushed
    • 1 lb ground beef - LEAN
    • 1 1/4 cups beef stock
    • 2 tsp tomato paste
    • 1/2 tsp ground cinnamon
    • 1 tsp chopped fresh mint
    • Salt and pepper to taste
    • 1/2 lb macaroni
    • 1/4 cup butter
    • 1/2 cup all purpose flour
    • 2 cups milk
    • 1/2 cup plain yogurt
    • 1 1/2 cups grated kefalotiri cheese (6oz)


    Instructions


    1. Preheat the oven to 375
    2. In a skillet heat the oil
    3. Add onion and garlic and cook until soft
    4. Add beef and stir until browned
    5. Stir in stock, tomato paste, cinnamon, mint, salt and pepper.
    6. Simmer 10 to 15 minutes or until sauce is reduced.
    7. Meanwhile in a pan of boiling water cook macaroni 8 minutes or until tender.
    8. Drain rinse with cold water and set macaroni aside.
    9. In a saucepan melt the butter.
    10. Stir in the flour with the butter and cook 1 minute.
    11. Gradually stir in the milk and yougurt and simmer for 5 minutes.
    12. Season with salt and pepper.
    13. Spread half the macaroni mixture over bottom of a large gratin or souffle dish.
    14. Cover with meat sacue then top with remaining macaroni.
    15. Sprinkle remaining cheese over the top.
    16. Bake for 45 minutes or until browned.
