    Ritzy's Chicken Curry Casserole

    This recipe is from Kathy's mom - Ritzy.


    List of Ingredients


    • 6 to 8 piece of cooked chicken deboned and skinned.
    • 1/2 cup butter, melted with 1/2 cup flour - cook to make a roux.
    • 1 to 2 tsp curry powder, add to roux.
    • 1 tsp salt
    • 1/2 tsp pepper
    • 2 cups mushrooms
    • 1 small onion
    • 4 cups chicken broth
    • 1 small bag of frozen petite green peas
    • Potato chips for top of casserole


    Instructions


    1. Cook your roux - add the butter to the flour over heat and stir.
    2. Add the curry powder to the roux.
    3. Slowly add 4 cups of checken broth to the flour mixture. Cook until thickened.
    4. In a seperate pan saute the 2 cups mushrooms with the 1 small chopped onion. Saute in butter.
    5. Rinse 1 bag of small petite green peas then cut or shred the chicken into pieces.
    6. Mix the shredded chicken, sauted mushrooms, onions and peas with the sauce mixture.
    7. Place in a 9X13 butter casserole dish.
    8. Crumble potato chips on top and cook at 400 degrees for 20 minutes.
