    Slow Cooker Stuffed Peppers

    Recipe Introduction


    There is another Stuffed Pepper recipe in Meats - this one cooks in the Slow Cooker


    List of Ingredients


    • 6 large bell peppers, tops off, cored and seeded.
    • 1 lb very lean ground beef
    • 1 1/2 cups cooked rice
    • 2 large eggs beaten
    • 1/2 cup grated Pecorino Romano cheese
    • 2 tbsp minced parsley
    • /2 tsp salt
    • 1/2 tsp black pepper
    • 1 (28oz) can tomato sauce
    • 1/2 tsp garlic powder


    Instructions


    1. Cook the rice per instructions on the box.
    2. Combine the ground beef, cooked rice, egg, cheese, parsley, salt and 1/4 tsp of the blakc pepper in a large mixing bowl.
    3. Cut a very small hole in the bottom of each pepper.
    4. Spoon the meat mixture into the peppers and divide evenly. DO NOT PACK DOWN.
    5. Stand stuffed peppers upright in the Slow Cooker Stoneware Liner.
    6. Combine the tomato sauce, garlic powder, and the remaining black pepper in a large mxing bowl or mixing cup.
    7. Spoon some of the sauce over each pepper.
    8. Pour the rest into the Stoneware Liner.
    9. Cover and set the power switch to AUTO.
    10. Cook until peppers are fork tender (6-7hrs), or cook on low for 7 - 8 hrs.
