    Recipe Introduction


    A Clafoutis is a French Country cake/custard/grunt type dessert.


    List of Ingredients


    • 3 Tbsp sliced almonds
    • 3 Tbsp unsalted butter (melted)
    • 2/3 cup all purpose flour
    • 2/3 cup plus 2 tsp sugar
    • 1/4 tsp salt
    • 4 large whole eggs
    • 3 large egg yolks
    • 1 1/4 cups heavy cream
    • 2 Tsp vanilla
    • Finely grated zet of 1 lemon
    • 1 lb cherries (pitted)
    • 1/4 cup kirsch or brandy


    Instructions


    1. Start by pitting the cherries and soaking them in the brandy, allow to sit and soak brandy, while you do the rest of recipe.
    2. Preheat the oven to 350
    3. Place the sliced almonds in a single layer on a rimmed baking sheet. Toast until they are fragrant - less than 5 minutes....watch closely Don't burn! Allow to cool.
    4. Melt 1 tbsp of butter and coat your individual bowls with butter and set aside (6 oven proof bowls)
    5. Place flour, 2/3 cup sugar, salt, and almonds into the bowl of the food processor and pulse until mixture is finely gound.
    6. Transfer to a medium bowl and add the eggs and egg yolks, 3/4 cup heavy cream, vanilla and lemon zest and whisk to combine.
    7. Place in the refrigerator for 30 minutes or slightly longer.
    8. Divide the soaked cherries into the six bowls.
    9. Whisk the chilled batter with 2 tbsp of melted butter.
    10. Pour the batter of the cherries in the oven proof bowls.
    11. Place on a rimmed baking sheet and bake in the 350 degree oven for 20 mintues.
    12. At 20 minutes take them out and and sprinkle with remaining sugar and bake for anohter 15 to 20 minutes or until golden brown.
    13. Transfer to a wire rack and allow to cool.
    14. Whip remaining 1/2 cup cream until soft peaks form. Serve slightly warm or at room temp with whipped cream.
