    List of Ingredients


    • 1 mdeium vine ripe melon - honeydew, Charlyn, crenshaw or cantaloupe.
    • Traditional good quality Balsamic Vinegar
    • a few sprigs of fresh mint


    Instructions


    1. Cut the melon in half through it's poles. Scoop out the seeds and cut into wedges.
    2. Trim the skin off the wedges and arrange them artfully on a plate.
    3. Sprinkle with vinegar.
    4. Take a few leaves of the mint and cut them ito a fhiffonade and sprinkle this over the melon as well.
    5. Garnish with the rest of the mint.
    6. Serve well chilled.
    7. This can be made up to an hour ahead. Just cut the mint at the last minute prior to serving.


    Final Comments


    Other fruits also work nicely - strawberries, peaches or nectarines.
