    Dos Rios Sour Cherry Cobbler

    Source of Recipe

    Mary Drennan

    Recipe Introduction

This is one recipe for the cherry tree in the back of our house on Dos Rios Drive.

    List of Ingredients

    • 6 cups pitted sour cherries
    • 1 cup sugar
    • 1 cup flour
    • 2 tsp baking powder
    • 1 egg (lightly beaten)
    • 6 tbsp butter melted

    Instructions

    1. Preheat the oven to 400.
    2. Put cherries and 3 tbsp of the sugar into a medium saucepan. Heat over medium low heat, gently stirring occasionally until the sugar dissolves and cherries are wamed through 8 - 10 minutes.
    3. Meanwhile combine flour, baking poder and 3/4 cup the sugar in a medium bowl. Stir in the egg with a fork.
    4. Using your fingers work in the egg until the topping is crumbly (set aside)
    5. Put cherry mixture into a 8 x 8 baking dish.
    6. Scatter the topping over it in an even layer.
    7. Drizzle the melted butter over topping and sprinkle the remaining 1 tbsp sugar on top.
    8. Bake until topping is golden brown. 15 - 20 minutes.
    9. Set aside on a rack to cool briefly before serving or serve at room temp.
