    Really good and rich. Not really a cake - more like bars.


    List of Ingredients


    • 1 cup fresh rhubarb, chopped
    • 1 14oz can sweetened condensed milk
    • 1/4 cup fresh lemon juice
    • 1/2 teaspoon pure vanilla extract
    • 28 vanilla wafers


    Instructions


    1. Cook chopped rhubarb with a little water in a saucepan to make tender. Set aside
    2. Stir weeetened condensed milk, lemon juice and vanilla in a bowl, mix well.
    3. Stir in the cooked rhubarb
    4. Line a narrow 7X5 inch baking pan with waxed paper.
    5. Fill with alternate layers of rhubarb mixture and wafers, ending with a layer of wafers.
    6. Freeze
    7. Remove from the pan to a serving platter, remove wax paper.
    8. Cutie into slice and serve
