    Recipe Introduction


    This is an Australian favorite. They use lots of Passion Fruit, which is hard to find in the USA. But you can use your choice of fresh fruits.


    List of Ingredients


    • 4 egg whites (room temperature)
    • 1 pinch of salt
    • 1 cup white sugar
    • 1 tsp white vinegar
    • 1/2 tsp vanilla
    • 1 tbsp cornstarch
    • 1/2 pint heavy whipping cream (Whipped)
    • FRESH FRUIT OF YOUR CHOICE - Strawberries, kiwi, mangoes, blueberries, raspberries, bananas, papayas, peaches and of course Passion Fruit.


    Instructions


    1. Chill a large bowl and your beaters.
    2. Add a pinch of salt and the egg whites to bowl and beat on high until stiff.
    3. Gradually add the sugar, vinegar and vanilla.
    4. Continue to beat until well mixed. Total beating stage should take 5-7 minutes.
    5. Fold in cornstarch and turn mixture onto oven proof platter which has been fitted with waxed paper or rinsed with cold water.
    6. Mixture may be left in a mound for a high soft inner textured meringue or it may be shaped as desired.
    7. Place in a preheated 400 F oven. Turn down heat immediately to 250 F.
    8. Bake undisturbed for 1 1/2 hours.
    9. Meringue may crack in the cooling process.
    10. Spread whipped cream on top of cooled meringue.
    11. Arrange fresh fruit on top of the cream.
    12. Serve immediately.
