    Swedish Christmas Rice

    List of Ingredients


    • 1 qt milk
    • 1/2 cup cream
    • 2/3 cup uncooked rice
    • 1 egg beaten
    • 1 tsp vanilla
    • 3/4 cup sugar
    • dash of salt


    Instructions


    1. Heat the milk and cream to boiling.

    2. Add the rice

    3. Cook over low heat for 1 hour or until rice is done.

    4. Combine the egg, vanilla, sugar and salt. Add to the rice.

    5. Cook 5 to 7 minutes over a low heat.

    6. Put the rice in a large bowl and refrigerate for at least 45 minutes prior to serving.

    7. Make the lingonberry sauce that follows this recipe.

    8. When you take the rice out of fridge top each dish with a little scoop of ligonberries.

    9. You can also add a sprinkle of cinnamon.



    Final Comments


    The trick is to find ligonberries. Sometimes it's a real trick! Mom did not like the jelly ligonberries that come in a jar - but if it was the LAST, LAST resort she would use them! But REAL ligonberries are MUCH prefered! The Lingonberry Sauce follows:
