    Swedish Christmas Rice Lingonberry Sauce

    Recipe Introduction


    Goes with Swedish Rice. Please make sure you try to find fresh lingonberries. However this recipe also works with raspberries or strawberries.


    List of Ingredients


    • 1 qt fresh lingonberries
    • 1 3/4 cup water
    • 1 1/2 cups sugar
    • 2 1/2 tbsp cornstarch


    Instructions


    1. Place the berries and 1 1/2 cups water in a medium saucepan.
    2. Cover and bring to a boil - lower the heat and simmer for 15 minutes, then set aside.
    3. In a small bowl combine the sugar and cornstarch then add the remaining 1/4 cup water.
    4. Add to the berry mixture. - STIR CONSTANTLY.
    5. Return the pan to the heat and bring the mixture again to a boil.
    6. Cover and remove from the heat.
    7. Cool to room temperature.

    8. Use on top of Swedish Rice.


    Final Comments


    Don't ever use Lingonberry Jam on Swedish Rice!
