    Casey's Beer Batter for Fish

    List of Ingredients


    • 1/2 cup cornstarch
    • 1/2 cup flour
    • 1 tsp salt
    • 1 cup Schell's Beer (if not Schell's any beer will do)
    • 4 egg whites (stiffly beaten)


    Instructions


    1. Heat 1 inch of oil in a skillet or an electric skillet (375) - or until a bread cube browns in 1 minute.

    2. Cut fish fillets into serving pieces.

    3. Dip into batter.

    4. Fry in oil until brown and crispy - turn only once.

    5. Cook only until fish flakes easily with fork (4-6 minutes)

    6. Drain onto a paper towel

    7. (For a fish like smelt - cook much less time)
