    Recipe Introduction


    A cataplana is a copper Portuguese cooking pan. This cataplana is made in a Dutch oven and the end result is very near the Portuguese version.


    List of Ingredients


    • 2 tbsp olive oil (or enough to coat the bottom of the Dutch oven)
    • 1 1/2 cups favorite salsa (can use red or green)
    • 2 medium potatoes, peeled and thinly sliced
    • 2 whole skinless boneless chicken breast, halved
    • 1 medium onion thinly sliced
    • 1 tsp dried oregano
    • Salt and pepper to taste


    Instructions


    1. Preheat your oven to 350
    2. Place the olive oil in the bottom of the dutch oven, circle to coat the entire bottom of the pan.
    3. Add 1/2 of your salsa to coat the layer over the olive oil.
    4. Top with one layer of sliced potato slices.
    5. Now lay the chicken breasts on top of the potatoes.
    6. Over the breasts add one layer of onion slices.
    7. Pour over the remaining 1/2 of the salsa.
    8. Sprinkle with oregano.
    9. Salt and pepper to your taste.
    10. Cover and bake in the oven for 1 1/2 hours at 350.
    11. Serve.


    Final Comments


    We prefer green salsa - but other folks prefer red!
