    Recipe Introduction


    In chile this sandwich is called a CHURRASCO - here we would call it a Beef Tenderloin and Avocado Sandwich.


    List of Ingredients


    • 1 medium tomato finely chopped
    • 1 tbsp finely chopped cilantro
    • 1 small garlic clove minced
    • 1 small jalpeno, seeded and minced
    • 3 tbsp canola oil
    • salt and fresh ground pepper
    • 1 ripe Hass avocado peeled
    • 1 lb beef tenderloin sliced 1/2 in thick and pounded to a 1/4 in thickness
    • 4 soft rolls split
    • 1/4 cup mayonnaise


    Instructions


    1. In a large bowl toss the tomato with the cilantro, garlic, jalapeno and 1 tsp of the canola oil.
    2. Season with salt and pepper.
    3. In another bowl mash the avocado and season with salt and pepper.
    4. In a large skillet heat 1 tbsp of the oil until shimmering.
    5. Sesson the meat with salt and pepper and add 1/2 to the skillet.
    6. Cook over high heat heat until the meat is browned around the edges, but still pink in the center and 1 1/2 minutes.
    7. Turn and cook for 1 minute longer for medium.
    8. Transfer the meat to a large plate.
    9. Repeat with the remaining half of the meat and 1 tbsp of oil.
    10. Spread the avocado on the bottom halves of the rolls and the mayonnaise on the top halves.
    11. Arrange the meat on the avocado, top with the tomatoes and drizzle with the tomato and meat juices.
    12. Set the tops on the sandwiches and serve immediately.
