David's Cheese Blintzes

List of Ingredients
3 eggs
1 1/2 cups milk
1 cup flour
3 TB sugar
1/4 tsp. salt
Mix well in blender, chill 2 hours
Filling
1 1/2 lb. cottage cheese
2 eggs
1/2 tsp. salt
1/2 cup bread crumbs
1/4 cup sugar
1TB Lemon juice
1 tsp. lemon rind
Mix all together.
Preheat 8' skillet, brush with oil. Place 1/4 cup batter in pan, brown lightly one side. Place on waxed paper; continue with rest of batter. Take blintzes, brown side up, and fill with up to 1/4 cup cheese mixture in center. Fold sides to center, top and bottom to center to enclose. Brown over medium heat with margarine. Sprinkle with powdered sugar, or sour cream.Recipe
