    Garlic Shrimp

    Aunt Saunny

    1/2 lb small shrimp
    Kosher or sea salt
    1/2 cup extra virgin olive oil
    3 cloves garlic, minced
    1 small bay leaf
    1" piece dried red chile pepper, seeded
    1 tbsp minced parsley

    Sprinkle the shrimp on both sides with the salt. Let them sit at room temperature for about 15 minutes. In a small shallow casserole dish combine the garlic oil, bay leaf & chile pepper & saute' over medium high heat until the garlic just begins to colour. Add the shrimp & cook, stirring until the shrimp is done. Sprinkle with parsley & serve immediately in the casserole dish, accompanied by a good crusty bread for dunking.
