    The secret to perfect Swiss steak is slow and long cooking. I brown a round steak that has been cut into serving sizes in extra virgin olive oil. The steak is 3/4 to 1 inch thick. Remove the steak after it is brown and clean the pan. Then put into the pan one can of stewed tomatoes. One small onion sliced. Put the steak on top and maybe add another can of stewed tomatoes. No need to salt or pepper. I add horseradish also. Cook on top of the stove at your lowest heat covered tightly for no less that 3 (yes, three) hours. Long slow cooking is the way you will have fork tender Swiss steak. The aroma will make you even more hungry!
