    Aunt Saunny

    3 eggs
    1/2 c. milk
    1 tsp grated lemon rind
    1/2 c. flour
    2 granny smith apples, sliced
    1/4 c. sugar
    1 tsp cinnamon
    1/2 c. melted butter

    Combine eggs, milk, lemon rind-whisk in flour. Sauté apples in 4 tbsp butter; Pour batter over apples and bake 475 degrees for 20 minutes. Remove and quickly sprinkle with cinn/sugar; drizzle remaining 4 tbsp butter on top. Return to oven for 5 minutes.
