    Sweet Potato Muffins/Cupcakes

    Aunt Saunny

    1 spice cake mix
    2 cups cooked sweet potatoes
    3 eggs
    1/3 cup vegetable oil
    1/4 cup water or as needed
    1 can of Caramel READY frosting I like pillsbury

    1. Combine all ingredients in large mixing bowl.
    2. Beat on med for 2 minutes.
    3. Pour batter into 24 lined muffin cups.
    4. Bake at 350° for 20 minutes, or until Toothpick comes out clean.
    5. Cool in pans 20 minutes.
    Frost with Pillsbury Caramel ready frosting (in a plastic can_)Melts in your mouth
