    APPLE PECAN CAKE WITH PECAN TOPPING

    STREUSEL
    1 1/4 cups pecan halves
    1/2 cup each all purpose flour and brown sugar
    1/2 stick butter, cut in pieces
    2 1/2 tsp. cinnamon

    BATTER
    1 stick butter, softened
    1 cup sugar
    2 1/2 tsp. baking powder
    1/4 tsp. salt
    1 egg
    1 tbs. vanilla
    2 1/4 cups all purpose flour
    1 cup milk
    3 apples, cut in wedges

    HEAT OVEN TO 35O DEGREES. Have a baking sheet ready. Coat a 13X9 inch baking dish with nonstick spray. STREUSEL: Spread pecans on baking sheet. Bake 10 min. until toasted. Cool, chop. Mix next 4 ingredients in bowl with fingers until
    crumbly, stir in pecans.

    BATTER: INCREASE OVEN TO 375 DEGREES. Beat
    first 4 ingredients in bowl with mixer until fluffy. Beat in egg and vanilla. Beat in flour with milk, beating just to blend. Spread 2 cups batter in pan. Sprinkle with 1/2 the streusel. Top with apples, dot with 1 cup batter. Sprinkle with streusel. Bake 45 min. or until done. Cool. SERVE WARM OR AT ROOM TEMP, DUST WITH POWDERED SUGAR. MAKES 12 SERVINGS.
