    Banana Cake

    Aunt Saunny

    1 1/4 cups flour
    2/3 cup sugar
    1/4 cup cornstarch
    1 tsp. baking soda
    1/2 tsp.salt
    1 cup mashed bananas
    1/3 cup vegetable oil
    1 egg, beaten
    1 tbsp. vinegar or lemon juice
    1 tsp. vanilla

    In an 8 or 9 inch pan mix dry ingredients well with a fork.
    Add remaining ingredients and mix well.

    Bake in a preaheated 350 degree oven for 30 to 35 minutes.
    Cool pan on rack and sprinkle with icing sugar.
