    Citrus Syrup Cake

    Aunt Saunny

    9 oz unsalted butter
    9 oz caster sugar
    4 eggs
    3 1/2 oz natural yoghurt
    2 lemons zested and juiced
    2 oranges zested and juiced
    2 limes zested and juiced
    2 cups self raising flour
    1 cup granulated sugar
    whipped cream

    Preheat oven to 350*F.
    Line a 9 1/2 inch springform pan with baking paper.
    Cream butter and sugar,then fold in eggs, yoghurt and citrus zest.
    Stir in flour. Do not overmix.
    Spoon into pan , bake for 45 minutes or so.
    Put juices into pan with sugar. Bring to boil till sugar has
    dissolved.

    Cool cake, prick all over the top and pour half of the syrup on top
    of cake.
    Serve with reserved syrup and whipped cream.
