    Strawberry Divinity

    Aunt Saunny

    3 cups sugar
    3/4 cup light corn syrup
    3/4 cup water
    2 egg whites
    1 package strawberry-flavored gelatin
    1/2 cup flaked coconut
    1 cup pecans, chopped

    In a 2-quart saucepan combine sugar, corn syrup, and water and heat to boiling. Stir constantly. Continue cooking, stirring occasionally until a small amount of the mixture forms a hard ball when tested in cold water (252-degrees on a candy thermometer). In large bowl beat the egg whites until foamy; add gelatin beating until mixture forms peaks. Slowly pour hot syrup into beaten egg whites, beating constantly on high speed of electric mixer. Beat until candy begins to hold shape. Fold in coconut and nuts; place in a greased 9-inch square pan. Cool and cut into squares
