    Beef and Broccoli Casserole

    Aunt Saunny

    1- 10 oz. pkg. frozen chopped broccoli
    1 1/2 cups cooked rice
    1/2 cup chopped onion
    1/4 cup margarine
    3 Tbs. flour
    3/4 tsp. salt
    1/8 tsp. pepper
    2 1/4 cups milk
    1 cup shredded sharp American cheese
    2 cups cubed, cooked beef
    1 cup herb-seasoned stuffing mix
    1/3 cup water

    Cook broccoli; drain.
    Cook onion in 2 Tbs. of the margarine till tender, but not brown. Blend in flour, salt and pepper. Add milk slowly; blending in. Cook and stir till sauce is thickened and bubbly. Add cheese; stir till melted. Stir in cooked rice, broccoli and beef. Put in a 9x13 pan. Melt remaining margarine. Add stuffing mix and water to margarine; toss together. Sprinkle over all. Bake, uncovered 35 - 40 minutes till heated through.
