INGREDIENTS
* 3 pounds ricotta cheese
* 1 dozen eggs
* 1 cup sugar
* 1 teaspoon pure vanilla extract
* Grated rind from 3 oranges
* Grated lemon from 3 lemons
Preheat oven at 350° F. In a large bowl, beat eggs with beater and slowly add sugar, a little at a time. Add ricotta cheese and continue beating; add vanilla, then orange and lemon rind. Grease a 10-inch springform pan. Add mixture and bake for 60 to 90 minutes, until top of cake is golden brown. Let stand for 20 minutes in oven. Remove from oven and cool on rack.Refrigerate for several hours. Remove from springform pan and sprinkle with powdered sugar.
