    Crispy Chicken Bites with Sauces

    1 pound skinless, boneless chicken thighs or skinless, boneless
    chicken breasts
    1/4 cup all-purpose flour
    1 teaspoon dried parsley flakes
    1/2 teaspoon poultry seasoning
    1/8 teaspoon salt
    Dash pepper
    1 beaten egg
    2 tablespoons milk
    30 whole wheat or regular rich round crackers, finely crushed (1 -1/4 cups)
    Lemon wedges (optional)

    Rinse chicken. Pat dry with paper towels. Cut the chicken thighs or breasts into 1-inch pieces. In a plastic bag combine the flour, dried parsley, poultry seasoning, salt, and pepper. Add the chicken pieces a few at a time, to the seasoned flour mixture. Close the bag and shake to coat chicken pieses well. Set the chicken aside.

    In a small mixing bowl combine the beaten egg and the milk. In
    another small bowl place the finely crushed crackers. Dip the flour-
    coated chicken pieces, one quarter of the pieces at a time, into the
    egg-and-milk mixture. Roll the chicken pieces in the crusher
    crackers. Place the coated chicken pieces in a single layer on a
    large ungreased baking sheet.
    Bake at 400 degrees for 10 to 12 minutes or till chicken pieces are
    no longer pink. If desired, garnish with lemon wedges. Serve with
    dipping sauce.

    Cherry Dipping Sauce
    1 (12 ounce) jar cherry jelly
    2 tablespoons lemon juice
    1/8 teaspoon ground mace
    Dash ground cloves
    In a small saucepan combine all ingredients. Cook and stir over medium heat till heated through. Serve with Crispy Chicken Bites.

    Cajun Dipping Sauce
    1 (14-1/2 ounce) can Cajun-style stewed tomatoes
    2 teaspoons cornstarch
    1/4 teaspoon bottled hot pepper sauce

    In a blender container place the stewed tomatones. Cover and blend till nearly smooth. In a medium saucepan combine blended tomatoes and cornstarch. Cook and stir till bubbly. Cook and stir 2 minutes more. Stir in bottled hot pepper sauce. Serve with Crispy Chicken Bites.

    Southwestern Mole Dipping Sauce
    You can find canned mole powder in the Mexican foods section of your supermarket or in Mexican markets.

    1/4 cup mole poblano powder
    3/4 cup water

    In a saucepan combine mole powder and water. Bring to boiling; reduce heat. Simmer, uncovered, for 10 to 15 minutes or to desired consistency. Serve with Crispy Chicken Bites.
