    1. Perfectly Cooked Pasta Use 4 quarts of water for each pound of pasta when cooking. Use a generous pinch of salt and add only after water has come to a boil. Pasta should be cooked al dente which means "to the bite" or so that it gives some resistance to the teeth. Check pasta often so as not to overcook.

    2. Freezing Meatballs To freeze leftover meatballs, place on a cookie sheet and place in freezer until frozen. Store in plastic bag and they will stay separated until ready to thaw and serve.

    3. Is This Mushroom Fresh? Buy fresh mushrooms before they open. When stems and caps are attached firmly, they are truly fresh.

    4. Using Fresh Herbs When substituting fresh for dried herbs, use 3 times the amount of fresh that you would for the dried variety.
