Broiled Bananas with Creme Fraiche

butter-flavored cooking spray
3 sml bananas, peeled, quartered (cut lengthwise & in 1/2)
1 1/2 T dark rum ground nutmeg
6 T Creme Fraiche
Creme Fraiche
1/4 c cultured buttermilk
4 c plain low-fat yogurt
Recipe
Preheat the broiler. Spray a nonstick small oven proof pan withcooking spray. Place the banana quarters in the pan cut side down. Spray with cooking spray. Drizzle with rum and sprinkle with nutmeg. Broil until the fruit is warm and begins to brown.To serve, place two quarters of banana on each of 6 dessert plates and top each serving with a dollop of Creme Fraiche. Makes 6 servings.
Creme Fraiche
In a large saucepan, combine the buttermilk and yogurt. Heat until lukewarm, about 1 minute. Do not over heat. Remove from the stove and let stand at room temperature for 24 hours. Refrigerate until ready to use. Makes about 4 1/4 cups. Makes 6 servings.
