    3 WAYS TO USE BASIL

    BRUSCHETTA--- Mix 2 cups chopped tomatoes, 1/4 cup each chopped basil and onion, 1 tbs. olive oil and 1/4 tsp salt. Lightly toast sixteen 1/2 inch thick slices Italian bread. Spoon on tomatoes. Makes 8 appetizers.

    OMELET--- Beat 2 large eggs, add 3 oz diced cream cheese, 1/4 cup thin strips basil and 1/4 tsp each salt and pepper. Melt 1 tsp butter in skillet, add eggs cover and cook until set. Serves 1.

    BUTTER--- Stir chopped basil leaves into softened butter. Spread on corn on the cob or bread for tomato sandwiches.
