    2/3 lb. hot pork sausage
    1 large onion - chopped
    1 1/2 cups grated cheddar cheese
    3 large potatoes - grated
    6 eggs - beaten
    2 Tablespoons butter
    1/4 cup milk
    Salt and pepper to taste
    1 4-oz. can chopped green chilies
    Wheat tortillas

    Burrito filling:
    In a microwave-safe dish, crumble sausage. Add chopped onion. Cover and microwave on high for four minutes. Pour mixture into a large bowl. In the same microwave-safe dish, place grated potatoes. Sprinkle with salt and pepper. Cover and microwave on high for six minutes. Pour potatoes into the large bowl along with the sausage and onions and combine. Add cheese to this mixture as well and stir. In the microwave-safe dish, melt butter by microwaving for 45 seconds. Add eggs and milk and microwave on high for 3 1/2 minutes. Add this mixture to the sausage and potato mixture. Add green chilies and mix well.

    If desired, heat tortillas in microwave for a few seconds. Spoon filling onto tortilla, fold and enjoy!
