    Ingredients
    8 eggs 8
    Hot pepper sauce, to taste
    Salt and pepper, to taste
    2 jalapeño peppers, seeded and finely chopped 2
    1 tbsp butter 15 mL
    6 slices processed Cheddar cheese 6
    6 large (about 9-inch/23 cm) flour tortillas 6
    2 tomatoes, seeded and cubed 2
    Fresh cilantro leaves

    Directions
    Beat together eggs, hot sauce, salt, and pepper; stir in jalapeño peppers.

    In medium nonstick skillet, over medium-high heat, melt butter. Pour in egg mixture and reduce heat to medium-low. Cook and stir with a spatula until large, soft, moist curds form and no visible liquid egg remains.

    For each burrito, place one cheese slice on bottom third of a tortilla. Top with egg mixture, cubed tomato, and cilantro leaves.

    Roll up tortilla and tuck ends under. Place burritos on baking sheet.

    Bake in preheated 350°F (180°C) oven for 10 minutes or until hot. Serve with additional hot sauce.

    TO MICROWAVE: Place on microwave-safe plate and microwave, one at a time, on HIGH (100% power) for 1 minute or until hot.

    Variations

    Substitute 1/3 cup (75 mL) chopped green chili peppers for jalapeño peppers
