Enchilada PIe

1 lb. ground beef
1 large onion, chopped
Salt and pepper to taste
1/2 tsp garlic powder
1 large or 2 small cans Las Palmas enchilada sauce
1 C. tomato juice
1 lb. grated jack cheese plus extra for top
1 can sliced black olives
1 package corn tortillas (12)
Cook beef and onion, garlic salt, until onion is soft and beef is
cooked through Season with salt and pepper.
In another pan mix enchilada sauce, tomato juice, and more seasonings
if desired. Cook to blend flavors, about 15 minutes.
Spray 9X13 glass dish with Pam, layer ingredients, starting with a
little sauce, then tortillas, meat, cheese, olives and more sauce.
Repeat layers, ending with olives. Pour any remaining sauce over the
top. Cover with foil, bake about 45 minutes in a preheated 350 deg
oven. Uncover and sprinkle with more cheese. Return to oven to melt
cheese. Let sit for 5 minutes before cutting. Will serve 8 adults
which is nice. Ours was served with a great green salad, and sour
cream and salsa to add to the casserole! YUM.
