    Aunt Saunny

    2 cups shredded Colby Jack cheese (8 ounces)
    6 7- or 8-inch flour tortillas
    3 tablespoons canned diced green chile peppers, drained
    3 tablespoons chopped green onions
    3 slices bacon, crisp-cooked, drained, and crumbled, or 4 ounces bulk
    Italian sausage, cooked and drained
    salsa (optional)

    1. Sprinkle 1/3 cup of the shredded cheese over half of each
    tortilla. Top with chile peppers, green onions, and bacon. Fold
    tortillas in half, pressing gently.

    2. In a 10-inch skillet cook quesadillas, 2 at a time, over medium
    heat for 2 to 3 minutes or until lightly browned, turning once.
    Remove quesadillas from skillet; place on a baking sheet. Keep warm
    in a 300 oven. Repeat with remaining quesadillas. To serve, cut
    quesadillas into wedges. If desired, serve with salsa.
