    Cooked Tomatillo Verde Sauce

    3 cups water
    2 1/2 teaspoons salt
    2 cloves garlic
    4 chilies
    1 pound tomatillos husks removed
    1/2 cup loosely packed cilantro
    1/4 cup chopped onion

    In a saucepan bring the water and 1 teaspoon of the salt to a boil. Add the garlic, chilies and tomatillos. Simmer 8 to 10 minutes. Drain reserving 1/2 cup of the liquid. Transfer the vegetables and liquid to a blender. Addthe cilantro and remaining salt and puree briefly. Transfer to a bowl. Stir in the onion and let the sauce cool before serving. Sauce can be refrigerated for up to 3 days.

    makes 2 cups.
